Finally, popsicles! You in? The temperatures have been well into the 90s and 100s for the past two weeks. No complaints here. I love the warmth and sunshine, but the crazy electricity bills from running the AC all day and night annoy me. So I’m eating all the popsicles. Brown sugar milk tea popsicles.

What is milk tea?
In a basic form, it’s milk combined with tea. Like chai, which is an Indian version of milk tea, this one uses black tea or your favorite dark strong tea leaves, such as dark roasted oolong tea. Weak tea is not good for milk tea, so if you’re a fan of matcha, be sure to get a high-quality of this one.
Ingredients to make brown sugar milk tea popsicles
Making these popsicles is pretty easy, though it might take some time since you must cook the tapioca pearls or bubble tea first. You can make your tapioca pearls at home or use ready-made ones, and I prefer the latter.
- Tapioca pearls and I recommend WuFu Yuan black boba tapioca pearls
- Sugar. I prefer brown sugar because it gives some sweetness with a toffee flavor
- Tea. I use black tea such as Ceylon
- Milk. You can use whole milk or low-fat milk
What is brown sugar milk tea?
Some stores use condensed milk to make their milk tea sweet, which is similar to the Hong Kong version; however, most stores use liquid syrup or white sugar. To make it flavorful, I’m using brown sugar
What is bubble tea? What is boba?
Milk tea won’t be complete without bubble tea or chewy tapioca pearls. You can easily find store-bought bubble tea at various Asian supermarkets such as 99 Ranch Market, H Mart, Seafood City, or WuFu Yuan brands online. It comes in a bag and different sizes of pearls. To make it, add water in a small pot and bring to a boil. Once it has boiled, add pearls to boiling water and cook according to the directions.
Removing popsicles from mold – run the molds under warm water for 10-15 seconds while slowly and carefully remove each popsicle.
Variations to try
I favorite Black tea but recommend matcha or rose milk tea for different flavors. Or add jelly, such as coconut jelly, for extra chewiness.

Brown Sugar Milk Tea Popsicles
Ingredients
Brown sugar milk tea
- 4 cups hot water
- 8 black tea bags
- 1/2 cup milk
- 1 tablespoon brown sugar
Tapioca pearls
- 1 cup black tapioca pearls
- 2 cups brown sugar
- 1 cup hot water
Instructions
- Steep black tea in hot water, along with brown sugar. Let sit for about 10 minutes. Remove the tea bags and cool completely in the fridge.
- Meanwhile, bring a pot of water to boil. Add the tapioca pearls and boil until softened, about 20 minutes. Use a strainer to drain the pearls. Return the pearls into an empty pot.
- Add brown sugar and hot water to the pot. Soak the pearls in brown sugar mixture for 30 minutes.
- Divide the pearls among the popsicle molds. Add milk tea until the mold is filled. Insert the popsicle sticks, and then freeze for at least 6 hours, or overnight.
