I absolutely love soup. To me, there’s really not much more comforting than a big bowl of soup, especially on a gray and rainy day like today. So when I thought about dinner, this easy butternut squash soup came to mind.
This version of homemade butternut squash soup is two things:
- So easy. Like you can make it in the slow cooker, pressure cooker, or on the stovetop.
- Loaded with nothing but goodness that also happens to be naturally gluten-free and vegan. Woot!
- DELICIOUS. If a recipe can be on the table 3x a week and all my family members love it, I consider it a win.

To make this soup, you’ll need:
- Butternut squash. You can either use regular butternut squash or roasted butternut squash to bring out the natural sweetness and flavor.
- Onion. carrots, apples. Try using a sweeter apple if you like to bring out the sweetness from this soup.
- Chicken stock, whipping cream. If you like having milk instead, try using coconut milk to give an extra kick to this soup.
How to make this Butternut Squash Soup recipe?
- Combine all ingredients in a Dutch oven pot (large pot) over medium heat and cook until the soup begins to simmer for about 45 minutes or until the vegetables are very soft.
- Remove from the heat and puree the soup. Blend until smooth with an immersion blender.
- Stir in butter and cream. Add salt and black pepper.
- Serve and enjoy.

Easy Butternut Squash Soup
Ingredients
- 3 pounds butternut squash cubed and peeled (approximately 8 cups)
- 1 medium onion peeled and chopped
- 2 large carrots peeled and chopped
- 32 ounces reduced sodium chicken stock
- 2 tablespoons butter
- 1/2 cup whipping cream or coconut milk
- Salt to taste
- Black pepper to taste
- Optional toppings: pumpkin seeds sour cream, brown sugar
Instructions
- In a Dutch oven or large pot, combine the butternut squash, onions, carrots, and chicken stock. Heat over medium heat until the soup begins to simmer. Simmer the soup uncovered for 45 minutes until the vegetables are very soft.
- Remove the pot from the heat. Carefully blend the soup with an immersion blender until smooth or puree in a blender in small batches, then transfer back to the pot.
- Stir in the butter until melted then add the cream. Stir the soup until well blended. Season with salt and pepper.
- Serve the soup hot with sour cream ot desired toppings.
