Some of my friends have told me how frustrated they are with the lack of time they have to get dinner on the table after coming home from a full day of work. So, you can imagine how fun it was when I worked on this cookbook.
This book proves that cooking dinner for two can be easy. All the recipes can be made in one pot, most take fewer than 45 minutes to make, and they use 10 or fewer main ingredients. After the chaos of the day, cooking has become our way to unwind together.
And today’s recipe came from One-Pot Cooking for Two cookbook. Sun-dried Tomato Tortellini Soup is one of my favorite soup recipes – perfect for Fall and easy to make.
How to make sun-dried tomato tortellini soup:
While some soup takes time to simmer, this soup is so easy to make. All you need to do in a pot:
- Saute your onion and garlic
- Add your sun-dried tomato and tomato sauce
- Add in chicken stock, heavy cream, Italian seasoning, and season with salt and pepper. Bring to a boil and let it simmer for 15 minutes before you add in frozen tortellini or cheese tortellini and spinach
- Garnish with parmesan cheese on top
To make it vegetarian, use vegetable stock instead of the chicken stock—none of the delicious flavors will be lost with the swap!

Sun-Dried Tomato Tortellini Soup
Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 clove garlic minced
- 1/4 cup chopped sun-dried tomatoes
- 1/2 tablespoon tomato paste
- 1/2 cup diced onion
- 2 cups chicken stock
- 1 cup heavy cream
- 1/2 tablespoon Italian seasoning
- Salt to taste
- Freshly ground black pepper
- 9 ounces fresh or frozen three-cheese tortellini
- 1 cup spinach
- 1/4 cup grated Parmesan cheese for garnish
Instructions
- Heat the oil in a pot over medium heat. Add the garlic and cook for 2 minutes. Add the sun-dried tomatoes, tomato paste, and onion’ saute until tender, 3 to 4 minutes.
- Add the chicken stock, heavy cream, Italian seasoning, and salt and pepper to taste. Bring to a boil, reduce heat, and simmer for 15 minutes.
- Add the tortellini and spinach, and cook for 3 to 4 minutes if using fresh tortellini, or 7 to 8 minutes for frozen.
- Garnish with Parmesan cheese and serve immediately.
